Creamy Strawberry Chocolate Chia Pudding

My friend Lucy calls chia seeds "amazing little bladders of water". Chia seeds swell up in liquids and become gelatinous, like tapioca pearls. They are a wonderful source of calcium and omega 3 fatty acids, and will keep you full for a long time while drawing out bad cholesterol out of your body!

Ingredients
- 1/2 cup raw cashews
- 1 - 1 1/2 cups water
- 3 T agave nectar
- 1 inch vanilla bean
- 1/2 - 1 cup diced strawberries
- 1 t lucuma powder
- 1 T raw cacao
- 4 T chia seeds

Brazilian Strawberry Chia Pudding

If you like Brazil nuts, you will love this chia pudding! Super filling, high in calcium, protein and Omega 3s, it makes a very good and energizing mid-afternoon snack or breakfast. Try it with cashew milk, almond milk, sesame milk, as well as different fruits, and get different nutritional profiles and flavors!

Ingredients:

1 cup Mighty Brazil Nut Milk
1/4 cup strawberries
A bit of agave nectar, to taste
2 T chia seeds

Caramel Dream Bar Brownie

This delicious all-raw brownie recipe is adapted from Rawleen's recipe posted on Gone Raw. It is a delightful and filling way of eating plenty of nutrient rich foods such as Brazil nuts, cacao and more!

Use an 8” x 8” glass pan

Ingredients
Chocolate Crust:

* 1/2 cup Brazil nuts
* 3/4 cup pecans
* 1/4 cup walnuts
* 1 cup of chopped up dates, packed
* 1/4 cup of cacao powder
* Small squirt of agave nectar
* Small dashes of sea salt

Caramel Layer:

* 1/4 cup of raw unpasteurized organic pecan butter

Cinna-Lucuma Apple Crisps

These dehydrated apple crips are sweet and delicious. The cinnamon adds spice, and the lucuma add sweet creaminess. This recipe makes about 2 dehydrator trays. Double it to fill a 5 tray dehydrator.

Ingredients
- 6-8 sweet, firm apples
- 1 T powdered cinnamon
- 1 t powdered lucuma

Directions
- Peel and slice the apples into rings. An apple slicer/corer works great for this. Mix the cinnamon and lucuma together.

Raspberry Ganache Fudge Cake

This delicious and easy recipe was created by raw chef Ani Phyo. It is very easy to make, and tastes great! The cacao, walnut and avocado make it such a nutritious treat that you could almost have a slice for dinner!

Ingredients:
Fudge Cake
3 cups dry walnuts
2⁄3 cup unsweetened cacao powder or carob powder
1⁄4 teaspoon sea salt
1 cup pitted Medjool dates

Frosting
1⁄3 cup semi-soft pitted Medjool dates
1⁄4 cup agave syrup
1⁄2 cup ripe avocado flesh (from about 1 medium avocado)
1⁄3 cup cacao powder

Filling
1⁄2 cup raspberries

Triple Berry Cake

This recipe was created by the talented Heathy Pace for the Raw Freedom Community's 1 year anniversary. It is delicious, creamy and full of flavor, not to mention stunning!

Crust:
Make a nut crust of your choice (example: 1 cup walnuts/1 cup pecans/ 1/2 cup dates)
Press into the bottom of a 6” springform pan, or into a pie plate.

Filling:
- 1 ¼ cup almond milk
- 1 ½ cups cashews
- 1/3 cup agave
- 2 tsp pure vanilla extract
- ¼ cup melted cacao butter
- 1 tbs lecithin
- 2 cups mixed berries (raspberries, blackberries, blueberries), set aside

Mango Cheesecake

This recipe was created by the lovely and talented Heathy Pace, author of the eBook Just Desserts. It is a lovely dessert for a warm day, as the mango layer stays chilled or frozen. Perfect while imagining waves crashing at your feet!

Crust:
2 cups pecans
1/2 cup dates
Dash vanilla
Process the ingredients into a dough.
Press dough into the bottom of an 8" cheesecake pan.

Cheesecake layer:
2 cups cashews, ground finely*
1/4 cup raw honey
1/4 cup agave
Juice of 1 medium lemon
1/2 tsp pure vanilla extract

White Chocolate-Strawberry Cheesecake

This recipe was posted by Vanessa Sherwood on GLiving Community Forum. It is very easy and simple cheesecake, with a light filling and a delicate white chocolate flavor.

Filling:
2 cups fresh chopped strawberries
1 cup cashews (they do not have to be soaked)
3 oz (6 tbsp) melted coconut butter
1 oz (2 tbsp) melted cacao butter
1/4 cup light floral honey or agave
1 tablespoon lemon juice
1/4 teaspoon salt

Blend all of the ingredients in a vita mix or high speed blender until completely smooth.

Crust:
1/2 cup brazil nuts
1/2 cup shredded coconut

Fabulous Fourth of July Pie

Back in my cooked days, I used to make a very tasty Star Spangled Mousse Pie from Taste of Home. It called for a cooked butter pastry shell, semi-sweet and white chocolate, whipping cream, cream cheese, shortening and other... not very healthy ingredients. This raw version of the pie is even more delicious. After all, chocolate can be made raw, and so can pie crusts and fillings!

Ingredients:
For the crust:

- 1 1/2 cups cashews, unsoaked
- 1/4 cup shredded coconut
- 2 T dark agave nectar
- 1 T maple syrup
- 1 T coconut oil
- Pinch salt

Strawberry Shortcake

This recipe was created by the lovely Carmella Soleil of Raw Freedom Community. It is one of the most delicious raw cakes, and a true example of why the raw food diet is anything but restrictive!

Cake
3/4 cup well packed dates, chopped
1 tablespoon lemon juice
1 tablespoon vanilla
Pinch salt
1 cup ground almonds
1 cup dried coconut
1/2 cup cashews

Whipped Cream
1 cup cashews
1 cup + 2 tablespoons fresh coconut milk (simply blend 1 part dried coconut with 3 parts water in high speed blender)
1/8 - 1/4 cup honey or agave (depending on how sweet you like it)
