Sweet Raw Treats
My friend Lucy calls chia seeds "amazing little bladders of water". Chia seeds swell up in liquids and become gelatinous, like tapioca pearls. They are a wonderful source of calcium and omega 3 fatty acids, and will keep you full for a long time while drawing out bad cholesterol out of your body!
- 1/2 cup raw cashews
- 1 - 1 1/2 cups water
- 3 T agave nectar
- 1 inch vanilla bean
- 1/2 - 1 cup diced strawberries
- 1 t lucuma powder
- 1 T raw cacao
- 4 T chia seeds
If you like Brazil nuts, you will love this chia pudding! Super filling, high in calcium, protein and Omega 3s, it makes a very good and energizing mid-afternoon snack or breakfast. Try it with cashew milk, almond milk, sesame milk, as well as different fruits, and get different nutritional profiles and flavors!
1 cup Mighty Brazil Nut Milk
1/4 cup strawberries
A bit of agave nectar, to taste
2 T chia seeds
This delicious all-raw brownie recipe is adapted from Rawleen's recipe posted on Gone Raw. It is a delightful and filling way of eating plenty of nutrient rich foods such as Brazil nuts, cacao and more!
Use an 8” x 8” glass pan
* 1/2 cup Brazil nuts
* 3/4 cup pecans
* 1/4 cup walnuts
* 1 cup of chopped up dates, packed
* 1/4 cup of cacao powder
* Small squirt of agave nectar
* Small dashes of sea salt
* 1/4 cup of raw unpasteurized organic pecan butter
These dehydrated apple crips are sweet and delicious. The cinnamon adds spice, and the lucuma add sweet creaminess. This recipe makes about 2 dehydrator trays. Double it to fill a 5 tray dehydrator.
- 6-8 sweet, firm apples
- 1 T powdered cinnamon
- 1 t powdered lucuma
- Peel and slice the apples into rings. An apple slicer/corer works great for this. Mix the cinnamon and lucuma together.
This delicious and easy recipe was created by raw chef Ani Phyo. It is very easy to make, and tastes great! The cacao, walnut and avocado make it such a nutritious treat that you could almost have a slice for dinner!
3 cups dry walnuts
2⁄3 cup unsweetened cacao powder or carob powder
1⁄4 teaspoon sea salt
1 cup pitted Medjool dates
1⁄3 cup semi-soft pitted Medjool dates

Make a nut crust of your choice (example: 1 cup walnuts/1 cup pecans/ 1/2 cup dates)
Press into the bottom of a 6” springform pan, or into a pie plate.
- 1 ¼ cup almond milk
- 1 ½ cups cashews
- 1/3 cup agave
- 2 tsp pure vanilla extract

Process the ingredients into a dough.
Press dough into the bottom of an 8" cheesecake pan.

2 cups fresh chopped strawberries
1 cup cashews (they do not have to be soaked)
3 oz (6 tbsp) melted coconut butter
1 oz (2 tbsp) melted cacao butter
1/4 cup light floral honey or agave
1 tablespoon lemon juice

Back in my cooked days, I used to make a very tasty Star Spangled Mousse Pie from Taste of Home. It called for a cooked butter pastry shell, semi-sweet and white chocolate, whipping cream, cream cheese, shortening and other... not very healthy ingredients. This raw version of the pie is even more delicious. After all, chocolate can be made raw, and so can pie crusts and fillings!
For the crust:
- 1 1/2 cups cashews, unsoaked
- 1/4 cup shredded coconut
- 2 T dark agave nectar
- 1 T maple syrup
- 1 T coconut oil
- Pinch salt
